Dough:

Water, butter, salt, sugar are put on the fire, when they start to boil add flour, mixing well so as not to become lumpy until it comes off the pot.

Leave to cool. Then add eggs one at a time.

Make chopsticks or you can make heaps with a spoon, put them in a tray with baking paper and put them in the preheated oven (higher heat) for about 25-30 minutes.

Remove from the grill and leave to cool, then cut in half.

CREAM:

100 ml of milk, with the sugar and vanilla essence are put on the fire, the starch dissolves in the remaining milk, and when the milk on the fire starts to boil, pour the starch, stirring constantly so that it does not become lumpy and leave to cool.

Whip the cream and incorporate it into the cold cream.

Put the cream on one side of the eclair, cover with the other side and glaze.

GLAZE:

Put the chocolate and whipped cream on the fire until the eclairs are homogenized and glazed.

GOOD APPETITE!!
